My husband and I moved to Boorowa in 2019 after having lived in Canberra for 40 years. Our first Christmas here was very special and we were fortunate to host a Christmas lunch for new Boorowa friends along with our Canberra family.
One of the treats that has always made an appearance at our Christmas table is fruit mince tarts. Normally I make them out of Robertson’s Fruit Mince, available at supermarkets. However, in 2019 there was none at our local supermarket and I decided to make homemade fruit mince. It was such a hit that I’ve made it every year since, and the following recipe is outlined here for you to enjoy.
Ingredients:
• 500 gms peeled apples, finely diced
• 250 gms raisins, chopped
• 100 gms dried cranberries or cherries, chopped
• 125 gms blanched almonds, chopped
• 1 cup brown sugar
• 1 tsp Gewϋrtzhaus Christmas Cake and Pudding Spice
• 1 orange, juiced, including the zest from ½ an orange
• 1 cup fresh apple juice
• ½ cup brandy or rum
• 125 gms butter, melted
Method:
Place all the fruits into a large bowl and mix. Stir in the brown sugar, spice, juices, zest, brandy/rum and butter. Transfer to clean, sterilised jars and place in the fridge. Stir every day for a week, then the fruit mince is ready to be used.
