Salad
20 large deveined, shelled prawns (5 per person)
3 cups of salad greens
1 mango peeled and diced
1 avocado peeled and diced
½ red onion finely chopped
Toss the ingredients above in a large salad bowl. Add one punnet of raspberries and then drizzle for the following dressing:
Dressing
Mix the following together well:
2 tbspns olive oil
2 tbspns water
1 tbspn balsamic vinegar
1 tsp Dijon mustard
